Get your BBQs ready for summer

First and foremost, it's important to make sure your grill is in tip-top shape before you start cooking up a storm. This means giving it a good clean to remove any debris or leftover food from previous grilling sessions. You can use a wire brush to scrub the grates, and a damp cloth to wipe down the exterior of the grill. If your grill has a drip tray, make sure to empty it out as well.

Once your grill is clean, it's time to make sure you have all the necessary tools and accessories. Some must-haves include:

  • A spatula and tongs for flipping and turning food

  • A basting brush for applying sauces and marinades

  • Skewers for making kebabs

  • A meat thermometer to ensure your meat is cooked to perfection

  • Foil for wrapping up delicate items like veggies or fish

Now that you have your tools in order, it's time to think about what you'll be grilling. While traditional barbecue fare like burgers and hot dogs are always crowd-pleasers, why not mix it up a bit this year? Here are some unique BBQ ideas to try:

Why not try this Moroccan marinade yourself?

Ingredients:

• 50g butter

• 2tsp ground cumin

• 2tsp ground coriander

• Salt and pepper

• 2tsp paprika

• 3tbsp vegetable/olive oil

• 1tbsp thyme

• 3 cloves garlic, crushed

• 1 lemon, juice and zest

• 1tsp harissa

Method:

1.      Mix the butter and oil in a bowl, then stir in the spices, thyme, garlic, lemon zest and juice. Add the harissa, 1 tsp salt and plenty of freshly ground black pepper, and mix well.

2.      Put your chosen meat (works well with lamb, chicken, beef or vegetables) in a large shallow dish and spoon over the marinade. Using your hands, rub it all over the meat. Cover loosely with cling film and leave to marinate for at least 2 hrs, ideally overnight in the fridge.
