Why not try this Moroccan marinade yourself?
Ingredients:
• 50g butter
• 2tsp ground cumin
• 2tsp ground coriander
• Salt and pepper
• 2tsp paprika
• 3tbsp vegetable/olive oil
• 1tbsp thyme
• 3 cloves garlic, crushed
• 1 lemon, juice and zest
• 1tsp harissa
Method:
1. Mix the butter and oil in a bowl, then stir in the spices, thyme, garlic, lemon zest and juice. Add the harissa, 1 tsp salt and plenty of freshly ground black pepper, and mix well.
2. Put your chosen meat (works well with lamb, chicken, beef or vegetables) in a large shallow dish and spoon over the marinade. Using your hands, rub it all over the meat. Cover loosely with cling film and leave to marinate for at least 2 hrs, ideally overnight in the fridge.

Watermelon mojitos: Muddle fresh watermelon and mint leaves in a glass, add rum and lime juice, and top with soda water.

Iced tea sangria: Combine your favourite iced tea with white wine, fresh fruit, and a splash of brandy for a refreshing summer drink.
